HOW TO MAKE DONUTS THAT TASTE JUST LIKE KRISPY KREME

Here we are in quarantine week #1,482,398.  Am I right? It’s feeling a little like Groundhog Day over here.  However, these LIVE meet ups have been keeping me and my kids sane because we LOVE doing these (and they love to eat what I show you how to make ;). This week we’re tackling foods that most people think are too difficult or messy to make at home and outsmarting them.  Monday, Kate showed how to make biscuits super easy and today is DONUTS.  I mean who can resist a warm, freshly made donut?  No one…unless maybe you’re Voldemort…but he wasn’t really human…so….there’s that.

I actually tried these a few years back for my sister’s birthday and was hooked.  In fact, I never buy donuts anymore….like ever…because they just pale in comparison to these. In fact, these are so good that my kids and I made some serious cash selling these in our neighborhood on Saturday mornings and Christmas morning (just in case you and your littles are looking for a way to start a business).  The truth is, they’re simple and with the tips and tricks I’ve included in the donut recipe below, you’ll find they don’t take that long and don’t make that big of a mess. EXTRA DONUT MAKING TIPS:

  1. If you have an electric fry pan, it makes it even easier because it will keep the oil at a nice constant temperature.
  2. Also, be sure to save the oil from your donuts, you can use it again.  Just store it in your fridge and if you’re worried about any donut taste left over, fry up a sliced potato in the oil the next time you use it.  The potato will absorb any extra flavor.
  3. If you don’t want to fry them, you can also bake them at 350 for 8-12 minutes (should be light brown when you pull it out) and frost.  It won’t taste just like a fried donut, but they’re still good.
  4. You can also make one freeze one!  Freeze the pre-cooked donuts on a silicon-lined or greased baking sheet and freeze.  After 6-8 hours, remove them to a ziplock bag and store in the freezer for 4-6 weeks.  To use, allow to thaw in the fridge over night (put them in at the last possible minute before you go to bed), then bake or fry in the morning.

Cheater Donuts (just like Krispy Kreme)

Make donuts fresh at home and I promise you'll never buy another donut again. These are simple to make and clean up and taste about a billion times better than any donut you'll buy at a store.

Cook Time 10 minutes

Ingredients
  

  • 2 Tbsp yeast
  • ¼ cup warm water
  • 1 ½ cups lukewarm milk or 1 1/2 cups water + 1/4 cup powdered milk
  • ½ cup white sugar
  • 1 tsp salt
  • 2 eggs
  • 1/4 cup oil
  • 5 cups flour I like bread flour
  • 1 quart vegetable oil for frying
  • cup butter
  • 2 cups powdered sugar
  • 1 ½ tsp vanilla
  • 4 Tbsp hot water or as needed

Instructions
 

  • Sprinkle the yeast over the warm water, then add sugar. (If you haven't used your yeast in a while, or if you're nervous your yeast is too old, let it sit for 5 minutes until it's foamy just to make sure).
  • Add in order the oil, 4 cups flour, salt, eggs, dry milk powder in the bowl of your stand mixer with the dough hook attached. Mix for a few minutes at low speed, knead in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl.
  • Knead for 12 minutes at a moderate speed. (Kneading for a longer amount of time develops the gluten faster and gets us out of that time sucking first rise)
  • Allow dough to rest for 10 minutes.
  • Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. (I used a glass and the lid to my oil for the smaller hole. You can also just stick your finger through the middle to create the hole).
  • Let doughnuts sit out to rise again until double (you'll be amazed how quickly they will puff up). Cover loosely with a cloth.
  • While you're dough is rising, melt butter in a saucepan over medium heat or in a microwave. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
  • Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier cleanup.
