This kid-fav meal is easy to make and super delicious! Perfect for the summer (and the garden produce you're growing) or really any time you need a fast, delicious meal.
1/2cupbread crumbs (or in a pinch you can use oatmeal)
1egg
2tsp.salt
1tsp. garlic powder
120 oz.can pineapple chunks or tidbits
1/3cupvinegar
1/3cupsugar
1Tbsp.soy sauce
3-4Tbsp.corn starch
1/3 cupwater
2green peppers, chopped into chunks
3romatomatoes, chopped into chunks
Cooked Rice
Instructions
Make the Meatballs (or use other frozen meatballs)
Combine ground beef, crumbs, egg, salt, and garlic pepper into a large bowl and mix thoroughly.
Shape meatballs into 1 Tbsp. size meatballs.
Place cooling rack on top of baking sheet and place meatballs on top of cooling rack.
Bake at 425 degrees for 12-15 minutes.
Sweet & Sour Meatballs
In a deep skillet pan, combine juice from pineapple can, vinegar, sugar, soy sauce, corn starch, and water. Cook over medium-high heat until it boils and the sauce becomes clear and thick.
Add in hot meatballs, pineapple, and bell peppers. Cook for 1-2 minutes more.
Remove from heat and add tomatoes.
Serve over cooked rice.
Notes
I love to make a big batch of meatballs when I batch prep a bunch of ground beef I've just scored on sale. This way, the meatballs are already prepped and ready to go, making this meal done in about 20 minutes...or as long as it takes to make rice.
