Use this as a quick pasta substitute, or in your favorite Olive Garden Soup knock-off recipe. This recipe is as versatile as it is easy to make...especially with a few quick hacks that can help you make this in under 15 minutes!
1cupvery hot water (as hot as will come out of your tap)
1eggbeaten
1teaspoonsalt
1/8teaspoonground black pepper
1 1/2cupsall-purpose flour(or a combination of white and whole wheat flour)
Instructions
Start your water boiling. I like to boil water in a large deep skillet to cut down on waiting time.
Place potato flakes in a medium-size bowl. Pour in boiling water; stir until blended. Let cool.
Blend egg in the liquid measuring cup you used to measure water. Add in salt and pepper, and stir. Blend in enough flour to make a fairly stiff dough. Turn dough out on a well-floured counter and knead lightly.
Divide dough in half. Shape each half into a long thin roll, the thickness of a breadstick. With a knife dipped in flour, cut into bite-size pieces.
Using the back of your fork, gently roll dough pieces to give it that signature look and crevice to hold that delicious sauce.
Place a few gnocchi in boiling water. As the gnocchi rise to the top of the pot, remove them with a slotted spoon. Repeat until all are cooked.
