Super Easy, Blender Crepes

Just wondering….do you love crepes? Because I most certainly do!  Unfortunately, a lot of people are scared to make them (I mean why wouldn’t you…they sell all sorts of separate contraptions to make them!) But really, they are quite easy to make with just a few tricks!  

This recipe comes from my childhood and it is the BEST recipe, I think…hahaha. But the real question is what do you fill your crepes with?  I love cream cheese and strawberries, but just regular cream cheese poses a problem since it just tears the crepe and whipped cream cheese way more expensive.  So here’s a quick tip to make your own Whipped Cream Cheese.

HOW TO MAKE WHIPPED CREAM CHEESE EASILY AND FOR CHEAP!

Simply mix 3-4 Tbsp. whole milk or sour cream (for more tang) and 1 8 oz. block of cream cheese in a bowl and beat (either in a stand mixer or using a hand mixer) until light and fluffy.

HOW TO GET YOUR KIDS INVOLVED

Also, if you want to get your kids involved, here’s a fun trick for slicing strawberries using an egg slicer!  Just hull the strawberry and place upside down in the slicer and let it do it’s thing!  Kids think this is super fun and it’s very convenient to have someone doing this part while you make those amazing crepes.

Super Easy, Blender Crepes

Think crepes are hard? Think again! This crepe batter is so easy, no mess, and fun to make.
Prep Time 5 minutes
Cook Time 15 minutes
Course Breakfast
Cuisine French
Servings 5 people

Ingredients
  

  • 6 eggs
  • 1 1/2 cup flour
  • 1 1/2 cup milk (1/3 cup milk powder + 1 cup water)
  • 3 Tbsp melted butter
  • 1 Tbsp sugar
  • 4/4 tsp salt

Instructions
 

  • Combine ingredients in your blender and blend until a batter is formed.
  • Pre-heat a flat skillet on the stove to a medium-high heat.
  • Spray pan with non-stick cooking spray or butter. Pour enough batter into the pan to make a bullseye in the center. Quickly pick up the pan and move it in circular motions to spread batter around the pan.
  • Allow to cook until small bubbles form. Then flip and cook for 10 seconds more. Turn out onto plate.

Notes

We love to fill ours with cream cheese and sliced strawberries!  To make a very easy whipped cream cheese, simple mix 3-4 Tbsp. whole milk in with an 8 oz. bar of cream cheese and beat until light and fluffy.
Also, if you're looking for a speedy trick for slicing strawberries, simply hull the strawberry and place it upside down in an egg slicer and let the egg slicer do all the work!  I love to give this job to one of my kids to do while I'm making the crepes because they find it so entertaining!
